The Best Chocolate Chip Cookie Ever

1 1/2cup (230g) cake flour  2 cups (275g) all purpose flour  1 1/2 tsp (5g) kosher salt  2 tsp (8g) corn starch  1/2 tsp (6g) baking soda  1 1/4 cups (280g) unsalted butter  1 1/4  cups (285g) brown sugar  1/2 cup (115g) white granulated sugar  2 eggs  3 egg yolks  2 cups (165g) walnuts  400g chopped chocolate  1.In a mixing bowl combine white sugar, brown sugar  and butter. From slow to medium speed using whisk attachment mix until creamy in texture. Changing into paddle attachment add egg yolk and whole eggs one at a time mix until well combine. In a separate bowl combine and sift all purpose flour,cake flour, salt, coffee powder and baking soda. Mix into butter mixture in medium speed until well combine. Fold in chopped chocolate chip. Weigh into 100g each cover and chill overnight. After resting put it in a well greased pan and you can also add chopped chocolate chip on top, bake at 180c for 12-15 minutes
