Common Baking Mistakes
Not
Doing “Mis En Place”. Mis en Place is a French term means to put everything
on place. If you are new in baking then I recommend doing the Mis En Place for
you to avoid missing ingredients you need in your mixture. Remember in baking
all of your Ingredients should be complete and weight exactly according to
recipe.
Not
Reading and analyzing the recipe. You have to analyze the procedure as well
as the ingredients to avoid unpleasant mistakes. Remember there is science in
baking that can create a disaster if you do not have idea with the Ingredients.
Ingredients
substitutions. Again there is science in baking do not substitute baking
powder in baking soda because they are different in acidity level same with
milk and buttermilk.
Oven
not Pre Heated. If your baking a sponge cake, muffins or cupcakes. It’s ok
if you forgot to pre heat. But if your baking breads and it already risen and
proof and you forgot to pre heat, it will results in over proof breads and it
will ruin it.
Oven
not in right Temp. Each recipe needs a right temperature. In breads for
example breads with high sugar content should have a temp raging from 170-180
but for artisans bread with no sugar at all should have in high temp from
220-240. Remember to check your oven door
are closed to achieve the desired temperature and avoid opening often
during baking
Forgot
to set the timer. Right baking time is important to avoid under bake or
burnt baked products.
Wrong
choice of flour. Remember that APF, Cake flour, Bread Flour as well as
gluten Free Flour is different to each other. They are made base on how they
use. They contain different protein percentage needed in specific recipe.
Not
sifting your Flour. Sifted flour is lighter than unsifted. It will help you
mix well your batter or dough.
Dead
yeast. Yeast is a live microorganism use for bread making to able to rise
the dough. To test if the yeast is fresh. Put some 3TBSP lukewarm water in bowl
and dash some sugar and 1tsp yeast wait until it form bubbles.
Not
greasing your baking pans properly. This is common mistakes that you should
never forget to do to avoid sticking your baked products in baking sheets or
pans.
Butter
not in room temp. butter should always in room temp to mix well with the
Ingredients. This is a common mistakes in baking resulting in over mixed batter
or dough.
