Cinnabon style: Cinnamon Rolls recipe

 



FOR DOUGH

All Purpose Flour    500g

Sugar                        100g

Salt                            15g

Yeast                          15g

Eggs                         2pcs

Milk                         150g

Butter                        50g

FOR FILLINGS

Custard Cream or Butter

Cinnamon                      5Tbsp

Brown Sugar                  2 Cups

Nutmeg                           2tsp

FOR TOPPINGS

Cream Cheese            50g

Butter                          50g

Powdered Sugar          50g

Yogurt                         20g


PROCEDURE

For Toppings

In a mixer combined butter, cream cheese, powdered sugar and yogurt, beat until smooth.

For the Dough

1. In a mixer Combined all dry ingredients mix in a slow speed for a minute.

2. Slowly add eggs and milk mix in a medium speed until all ingredients are well incorporated. 

NOTE: Milk absorption may vary, slowly add milk until you reached the desire texture. you can add flour gradually if it is too sticky or you can add milk if it is lack of hydration.

3. Add butter, mix in high speed until it develop gluten and form a smooth dough. Do the window pane test. Rest for about an hour or until it double the size.

4.  After resting for an hour, Flatten your dough in a rectangular shape ( on any desired sizes, you can portion your dough into two batch). preferrably 1/4 inch thickness

NOTE: make sure your work surface are well floured before you flatten the dough.

5. using offset spatula, spread evenly custard or butter thinly and evenly over dough.

6. mix together the cinnamon and sugar and sprinkle evenly just enough to cover the dough, then add a dash of nutmeg just to add flavor on it.

7. starting from the top part of your dough. slowly roll it tightly and gently up to the bottom edge.

NOTE: tuck the loose end under each roll to secure it

8. Cut it into 2 inch sizes, put it in a well greased pan. cover and let them rise for 20 mins or until double the sized.

9. after proofing, bake them in a pre heated oven for 15 mins or until golden brown for 170c.

10. after baking let it cool and put a generous amount of cream cheese frosting on top of it.
