Honey Glazed Cinnamon Raisin Loaf bread





Ingredients

Bread Flour                300g

Almond Flour            100g

Salt                              5g

Yeast                          10g

Brown Sugar              80g

Cinnamon                  2Tbsp

Water                         150g

Butter                        50g

Raisin                        100g


Procedure

1. First, raisin must be hydrated, soak in water for about an hour before using. Set aside.

2. In a large bowl combine bread flour, almond flour, yeast, brown sugar, cinnamon and salt. Mix well.


3. Gradually add water, mix well until you for a dough. Autolyse for 1 hour.


4. After you autolyse. Fold in raisin then knead until all raisin are incorporate. Then add butter knead again until dough became elastic and smooth. Rest for an hour or until double the size.






5. Portion your dough into two portion, shape into ball and rest for 10 mins.



6. Flatten your dough into rectagular shape. then fold in from top up to the bottom edge.


7. Put in a greased pan, rest until double the size or Cut your dough lengthwise into pieces approximately 1/2 inch thick then put it a greased pan.

8.  Egg wash then sprinkle sugar and a little of almond flour to add crunch.

9. Bake in a pre heatd oven at 180c for 20-25 mins or until golden brown and Maillard Reaction appear. Glazed honey on top.
