Simple and Easy Bibingka Recipe


Ingredients

All Purpose Flour            250g

Eggs                                4pcs

Sugar                              100g

Coconut Milk                  2 Cups

Cream.                             50g

Baking Powder               2Tbsp

Clarified Butter               50g

Ube Flavorings ( optional)

Toppings

Salted Egg

Cheese


Procedure

1. Mix all dry ingredients. Add egg, coconut milk mix well.

2, Add clarified butter mix well until no lumps.

3. Put in a a round pan or rectangular pan with banana leaves underneath or aluminum foil. You can also use ensaymada big molder.

*You can add ube extract to batter if you want a varition of bibingka.

4. Bake in a Pre heated oven at 180c for 20 mins or until cook. You can check using toothpick it should come out clean.

5. Put a generous amount of cheese and salted egg then broil until cheese is melted and has some burnt effect on top.

6. Brush with butter, grated coconut and muscovado sugar.
