Red Velvet Cheesecake


For Crust

Butter                      60g

Crushed Graham    100g

Cocoa Powder       1/4cup

For Cheesecake

Cream Cheese        300g

Eggs                       2pcs

All purpose Cream (thick) 1/2 cup

Cocoa Powder        1/8 cup

White Sugar            1/2 cup


Red Food Color

PROCEDURE

For Crust

1. In a large bow combine graham, cocoa powder, butter, sugar and salt mix evenly.

2. Put it in a muffin pan approximately 1/8 cup then press it from bottom to sides

3. bake for 5-7 mins. Let it cool.

For Cheesecake

1. Combine white sugar and cream cheese, mix in a medium speed using paddle attachment until smooth.

2. In a low speed add eggs and cream mix until all ingredients are well incorporate, gradually add cocoa. Mix until smooth.

3. Add in Food Color base on your preferences.

NOTE: avoid over mixing your mixture

3.Pour filling over crust, spread evenly. Approximately 1/2 cup.

4.Gently shake to flatten

5.Bake for about 12-15 mins at 170c. make it sure it will not be over bake since it is in muffin pan with a smaller portion.

6. Let it cool. garnish with whipping cream.
