EGG PIE: Chef's Secret Recipe!


Ingredients

For Crust

All Purpose Flour        360g
Sugar                            20g
Salt                               1tsp
Egg                              1pc
Water                           100ml
Butter                          200g

For Egg Pie Mixture

Powdered Milk           500g
Hot water                    600ml
Sugar                            250g
Eggyolks                      12pcs

For Meringue

Eggwhites                    3pcs
White Sugar                 50g
Cream of tartar            5grams

PROCEDURE

For Crust

1. Combine all ingredients, mix and knead until smooth.
2. Rest for an hour
3. After resting flatten dough enough to civer 8 inch round pan.
4. Mold into pan and poke using fork.
5. Bake at 160c for 8 minutes.
6. Let it cool.

For Pie Filling

For Eggpie mixture

1. Combine powdered milk and hot water, mix well.
2. Add sugar eggyolk, mix well.
3. Strain mixture then set aside.

For Meringue.

1. In a mixer combine eggwhites and cream of tar tar, mix in medium speed until soft peak.
2. Gradually add sugar, mix in high speed until stiff peak.

-Fold in meringue into eggpie mixture using cut and fold technique portion by portion.
-pour in into pre bake pie crust.
-bake at 160c for 30-40 minutes until the mixture is not jiggly.
