Lemon Matcha Cupcakes


Ingredients

All Purpose Flour        1 3/4cups (200g)
Matcha Powder            2tbsp
Baking Powder            1tbsp
Baking Soda                 1/2 tsp
Salt                                1/2tsp
Sugar                            3/4cup  (138g)
Evaporated Milk           3/4cup (225g)
Oil                                  1/4cup (50g)
Egg                                 1pc
Lemon juice and zest    1pc


1. In a bowl combine Sugar, egg, evaporated milk, oil and lemon juice and zest. Mix well.
2. Add All purpose flour, matcha powder, baking powder, baking soda and salt. Mix well until smooth and free from lumps.
3. Transfer into muffin pan with liner and add white chocolate on top (optional). Bake at pre heated oven 170c for 15-17 minutes or until done. Let it cool.
4. Add whipping cream or buttercream on top with matcha powder or lemon zest garnish with slice lemon.
