The Best Chocolate Chip Cookie Ever
- 1 1/2cup (230g) cake flour
- 2 cups (275g) all purpose flour
- 1 1/2 tsp (5g) kosher salt
- 2 tsp (8g) corn starch
- 1/2 tsp (6g) baking soda
- 1 1/4 cups (280g) unsalted butter
- 1 1/4 cups (285g) brown sugar
- 1/2 cup (115g) white granulated sugar
- 2 eggs
- 3 egg yolks
- 2 cups (165g) walnuts
- 400g chopped chocolate
1.In a mixing bowl combine white sugar, brown sugar and butter. From slow to medium speed using whisk attachment mix until creamy in texture.
- Changing into paddle attachment add egg yolk and whole eggs one at a time mix until well combine.
- In a separate bowl combine and sift all purpose flour,cake flour, salt, coffee powder and baking soda.
- Mix into butter mixture in medium speed until well combine.
- Fold in chopped chocolate chip.
- Weigh into 100g each cover and chill overnight.
- After resting put it in a well greased pan and you can also add chopped chocolate chip on top, bake at 180c for 12-15 minutes
