Red Velvet Pandesal with Cream Cheese Filling


Ingredients


For Cream Cheese Filling

Cream Cheese
500g
Confectionaries sugar or Granulated Sugar
200g (it can depend on your preferred consistency)
Butter
150g



For Dough



Bread Flour

500g

All Purpose Flour

500g

Cocoa Powder

100g

Skimmed Milk

100g

Sugar

200

Salt

15g

Yeast

20g

Butter

100g

Water

550g

RED Food Color

depend on your preference.


NOTE: water absorption may differ, always observe in putting your water, you can add water if it is lack of hydration or add flour if it is too sticky

Procedure

FOR FILLING

1. Cream butter until it lightens color, then add cream cheese mix well.
2,.Gradually add sugar OR quantity will be base on your preference as long the filling is manageble

FOR DOUGH

1. Combine all dry ingredients, mix in a low speed for 30 seconds.

2.Gradually add water and food color (amount of food color depends on your preferences). Mix until it forms a dough.

3.Add softened butter mix in medium speed until all butter are well incorporate. Change into high speed until it forms a smooth dough and elastic. Do the window pane test.

NOTE: WATER ABSORPTION MAY VARY YOU CAN ADD FLOUR IF IT IS TOO STICKY OR ADD WATER IF IT IS LACK OF HYDRATION.

4. Rest for an hour or until it double the size.

5. Portion your dough into smaller portion approximately 35grams.

6.Shape into ball and rest for 15mins.

7. Flatten your dough until round shape is formed.

8. put cream cheese in the middle approximately 15-20 grams, wrap and gather the edges and seal the bun.

9.roll it in breadcrumbs put it in a greased baking pan, cover and let it rise until it double the size.

10.bake in a pre heated oven at  170c for 13-16 mins.
