Mini Mango and Avocado Cheesecake: Simple and Easy


Ingredients

For Toppings

Avocado Puree

Dice Mango

Whipping Cream (optional)

For Crust

Butter                      120g

Crushed Graham    200g

White sugar            20g

Salt                        1/2tsp

For Cheesecake

Cream Cheese        300g

Eggs                       2pcs

All purpose Cream (thick) 30g

All Purpose Flour   20g

White Sugar            80g

Vanilla                     1tsp

PROCEDURE

For Crust

1. In a large bow combine graham, butter, sugar and salt mix evenly.

2. Put it in a muffin pan then press it from bottom to sides

3. bake for 8-10 mins until lighly golden. Let it cool.

For Cheesecake

1. Combine white sugar and cream cheese, mix in a medium speed using paddle attarchment until smooth.

2. In a low speed add vanilla,eggs and cream mix until all ingredients are well incorporate, gradually add flour. Mix until smooth.

NOTE: avoid over mixing your mixture

3.Pour filling over crust, spread evenly.

4.Bake for about 12-15 mins at 170c. make it sure it will not be over bake since it is in muffin pan with a smaller portion.

5. Let it cool. garnish with whipping cream,add mango dice and avocado puree.
