EGG PIE: HOTEL SECRET RECIPE | HOW TO BAKE IT EASY




 INGREDIENTS

For Crust

APF        250g

Sugar      15g

Lard        50g

Water      50g




For Filling

Hot Water            220grams

Skimmed Milk    180g

Sugar                    50g

Egg yolk               4pcs

Egg white               1pc

Sugar                    2Tbsp

Cream of tartar    5g

Procedure

For Crust

1. Combine all ingredients, Knead until smooth. rest and cover for an hour.

2. Flatten dough until you cover a round pan or pie pan. Set aside

For Filling

1. In a small bowl combine hot water and skimmed milk. Set aside.

2. In a large bowl combine egg yolk and 50g white sugar.

3.Add in skimmed milk mixture. 

4. Mix well and strain two times. Set aside

5. In a small bowl combine egg whites and cream of tartar beat and gradually add 2 Tbsp of sugar. Beat until soft peak.

6. Combine meringue and egg yolk mixture using cut and fold technique.

7. Transfer into pie pan. Bake at 160c for 40-50 minutes.
