Chunky Asado Siopao ala Chowking Recipe




For Asado Filling

2 Tbsp cooking oil

5 cloves garlic minced

1 medium size onion minced

1/2 kilo pork slice into small cubes

5 Tbsp soy sauce

5Tbsp sugar

3 Tbsp oyster sauce

2 pcs star anise

3 cups water

2 Tbsp cornstarch dilute in 1/4 cup water


For Dough

Cake Flour           350g

Yeast                    1tsp

Baking Powder    1tsp

Sugar                   60g

Oil                       30g

Water                    120g and 1/4 cup for yeast⁸


PROCEDURE

For filling

1.Saute onion and garlic until translucent.

2. Add pork then saute until brown.

3. Add water, soy sauce, oyster sauce, sugar and star anise. Mix well and boil until meat become tender and sauce is reduce. (you can adjust seasoning depends on preference)

4. Add cornstarch, mix well until sauce become thick. set aside and let it cool.

For Dough.

1. In a small bowl combine s1tsp sugar, 1tsp yeast and 1/4 cup water. Mix well until smooth then set aside.

2. In a large bowl, combine flour, sugar and baking powder.

3. Add yeast mixture, oil and water, Mix and knead until smooth and elastic. Rest until double in size.

4. After resting portion dough into 60g each, shape into ball then rest for 10 minutes.

5. Flatten dough using rolling pin, then add asado filling approximately 40g. ( I used to chill the filling so I can easily put it on dough).

6. Closed tightly the bottom part then put it in parchment paper. Rest for 15 minutes.

7. After resting steam your siopao for 15 minutes.
