RAISIN CINNAMON LOAF

 Ingredients

Bread Flour               350g

Salt                            1/4tsp

Sugar                         30g

Yeast                         1/2tsp

Bread Improver         1/4tsp

Water                         130g

Butter                        30g


Filling

Raisin                        130g

Cinnamon                  2Tbsp

Nutmeg                      1tsp

Sugar                          100g


PROCEDURE

FOR FILLING

1. Soak your raisin in 1 cup water and 1/2 cup red wine or brandy(optional) for 1 hour, set aside and drain.

2. Combine sugar, cinnamon and nutmeg. Mix well and set aside.

FOR DOUGH

1.Combine bread flour, sugar, yeast, bread improver and salt. Mix well.

2. Add water, mix until you form a dough.

3. Add butter mix and knead until smooth and elastic. Rest and cover until double in size.

4. After resting gently flatten your dough into rectagular shape.

5. Brush with butter then add with cinnamon sugar and raisin ( see video above).

6. Gently roll your dough towards the end.

7. Cut in the middle then form like a braid ( see video above).

8. Put it in a well gread pan. Rest and proof until double in size.

9. After proofing brush with egg wash and sprinkle with another cinnamon sugar then bake at 180c.
